½ cup whole wheat couscous
1 large orange
3 tsp. Olive oil
4 small tilapia fillets (about 1 ½ half lb. Total) kosher salt and pepper
2 garlic cloves, thinly sliced
1 piece (½ inch) fresh ginger, very thinly sliced
1 pint cherry tomatoes, each cut in half
2 green onions, thinly sliced
Step 1: prepare couscous according to package directions. Cut away peel and white pith of orange. Working over bowl, cut orange into segments, adding segments to bowl along with any juices.
Step 2: Meanwhile, in nonstick skillet on medium, heat 1 teaspoon oil. Season tilapia with ½ teaspoon kosher salt and ¼ teaspoon freshly ground black pepper. Add to skillet and cook 1 to 2 minutes per side, or until opaque throughout.
Step 3: Wipe out skillet and heat remaining 2 teaspoons oil over medium heat. Add garlic and ginger, and cook about 1 minute, or until they begin to break down, tossing occasionally. Add orange and any juices and gently toss to heat through. Serve with tilapia and couscous; sprinkle with green onions.
