Scallop and Papaya “Gunkan” Sushi


Serve 6

2 whole nori sheets
1 cup bay scallops
Salt and black pepper, to taste Togarashi pepper, to taste
1 teaspoon sesame oil
½ cup papaya, sliced into small cubes
¼ cup Japanese mayo
2 stems green onions, sliced finelly
1 ½ cups sushi rice (recipe below)

   


  









  • Cut the nori sheets into 6 equal strips.
  • Season scallops with salt, pepper and togarashi, in a pan, heat seasame oil and sauté scallops for 45 seconds. Drain and mix with papaya, mayo and green onion.
  • Take 1/8 cup of sushi rice (recipe below) and shape like a battleship (oval shape). Wrap a nori strip around it and top with a spoonfuls of the scallop mixture. Repeat with the rest of the ingredients. Serve with wasabi and soy source.
Sushi Rice
1 ½ cups Japanese rice
2 ¼ cups water
1 cup rice vinegar
½ tablespoon salt
1 tablespoon sugar

      * Cook the Japanese rice in water.
      * Mix together the vinegar, salt and sugar.
Drizzle vinegar over the rice while it is still hot, mixing continually until rice becomes lukewarm.
