½ cup papaya,
sliced into small cubes

Japanese mayo

green onions, sliced finelly

sushi rice (recipe below)
- Cut the nori sheets into 6 equal strips.
- Season scallops with salt, pepper and togarashi, in a pan, heat seasame oil and sauté scallops for 45 seconds. Drain and mix with papaya, mayo and green onion.
- Take 1/8 cup of sushi rice (recipe below) and shape like a battleship (oval shape). Wrap a nori strip around it and top with a spoonfuls of the scallop mixture. Repeat with the rest of the ingredients. Serve with wasabi and soy source.

* Cook the Japanese rice
in water.
* Mix together the
vinegar, salt and sugar.
Drizzle vinegar over the rice while it is still hot, mixing continually until rice becomes lukewarm.
